Downtown:  Hotel Fort Garry or Humphrey Inn and Suites

Closer to airport:  Hampton Inn, Courtyard inn, Fairfield Inn, Homewood Suites.

A number of touring laddies also use private condo's in the Exchange District that you can find on Air Bnb.

   If referring to services like Airbnb, condo rental can be risky depending on rules and surveillance from other residents. A provider could get away with it with limited clients and careful screening. But if too many disruptive clients, this will turn bad for everyone, including the unit owner.

some spots better than others 

good to speak with other providers who have travelled there and see what’s worked well for them

i have visited providers at condos though where it seemed much easier to be discreet than at a hotel. 
depends a lot on the layout

I feel more comfortable hosting in an Hotel for the exact reasons just mention above!

I've recommended the Clarion hotel to other providers and they were pleased. They used to offer discounts for extended stays and are right next door to the biggest shopping mall in Winnipeg. They have a multitude of room configurations as well. I used to visit a local provider there quite frequently, although that was pre covid, but the rooms are very comfortable.
